A couple of weeks ago, I met a wonderful woman and food blogger who inspired me to get in the kitchen a whole lot more than I usually do. Like most of us, she's a mom faced with the challenge and huge responsibility of having to provide a healthful meal for her family. The difference is she loves it! And she just made it all seem so easy!

(When I go into the kitchen, I'm at a loss for what to cook all of the time.)

So when she told me that the recipes that she posts are ones that she's cooking for her family that night, right then and there, I was enthralled. If she can document every aspect of her cooking a meal for her family while she's cooking that meal? the recipes should be easy enough for me to try, right?

So when I got home, one of the first things I did was look up her food blog and was immediately  drawn to the Seafood Enchilada recipe. So I decided to try it.

What I love so much about Mommiecooks.com is that Julie takes pictures of each step and places them just when you need a little encouragement – there's nothing I hate more than a recipe that says do this, this, and this . . . and you're left there thinking, "is THAT what it's supposed to look like?"

What I love even more so than her easy-peasy recipes that leave you feeling confident?
Is that they turn out Delicious!
